OLIVE CHEESE MELTS
I wanted to make snacks for the evening and I also had a jar filled of olives. So I searched and searched over the internet looking for an easy appetizer involving olives. Luckily I found what I wanted.

You Would Need
1 small loaf of any panini bread (you can in fact use any bread)
1/2 cup green olives
1/4 cup tomatoes
1/4 cup onions
1/4 cup mayonnaise
1 cup shredded mozzarella
Shredded Parmesan for sprinkling on the top
Salt and pepper to taste
Olive oil
How to Go About It
Preheat oven to 200 degrees C.
Cut the loaf into 3/4 inch pieces. Basically each slice should be of the size that you can easily hold while eating, not too big and not too small. The thickness should be around 3/4th of an inch.
I used an herb and pesto panini bread. I already had a good ‘herb’ smell and flavor to it.
Generously brush the slices with olive oil.
Chop olives, tomatoes and onions.
In a bowl combine together olives, tomatoes, onions, mozzarella, mayonnaise, salt and pepper.
You can increase or decrease the quantity of each according to what you personally like or dislike. Also, remember that mayonnaise is a little salty in flavor so you would need to add a little less salt than you otherwise would.
Spread this mixture over your bread slices. Sprinkle some Parmesan on the top.
Bake the bread at 200 degrees C for 10 minutes or until slightly brown and crisp.
They were full of flavor. My family loved them and I had to fix a second round quickly. The main flavor of the dish comes from mayonnaise and olives. I liked the combination and would try it again in some other dish.
